OUR NEW AUTUMN COCKTAIL MENU

Crafting an in-house cocktail list typically starts with a common approach—we dive into researching books, scouring YouTube videos, and exploring other bars to discover new and intriguing concepts and methods. Our goal is to reinvent well-known ideas that have already undergone countless transformations.

As a predominantly known gin bar, we also wanted to spread our wings and incorporate a diverse range of spirits and liqueurs from our arsenal. The essence of our new list revolves around the term "in-house", emphasizing our commitment to making as many cocktail ingredients as possible right here in our establishment. Many so-called "premium" products, designed for long shelf lives, often contain acid regulators, stabilizers, and other additives that detract from their true flavors.

Of course, we face a delicate balancing act, considering the cost factor and the potential to charge steep prices per drink. To tackle this challenge, we delved into time-honored techniques that employ naturally occurring ingredients to extend the lifespan of our creations.

Our autumn list is a source of pride for us, as it showcases a plethora of house-made components. For instance, we've crafted a delightful strawberry Horchata—a sweet rice milk beverage hailing from Mexico—which we've paired with tequila. We've also developed our own hazelnut orgeat - a French syrup infused with almonds and barley, as well as falernum - a Caribbean alcoholic syrup infused with ginger and allspice. These elements serve as the foundation for both classic favorites and innovative concoctions found on our menu. Additionally, we've taken the initiative to create our own passionfruit ginger beer, jalapeno syrups, shrubs (flavored vinegar and sugar blends), and bitters, infusing our new list with vibrant, handcrafted touches.

Above all, our autumn list represents our industry's ongoing commitment to reinventing and reimagining beverages. It provides our customers with an experiential journey through both historical and contemporary drinks. We hold this achievement in high regard and are excited to share it with our valued clientele.
