Bowerbird tips its cap to the classics, with a great underlying respect for the history of Gin cocktails. Our extensive Negroni and Martini variations accent this classic offering. We endeavour to make everything by hand, in-house, from fresh ingredients unadulterated by stabilisers and regulators.

Designed for sharing, Bowerbird’s food menu is influenced by the mediterranean diet along with some of the finest cheeses and charcuterie meats we could source in Victoria.

We're fortunate to have such a diverse group of minds here at Bowerbird Bar, each person bringing unique perspectives and experiences to the table, which allows us to keep things fresh, and be more dynamic when it comes to menu planning.

  • Max has spent over 20 years in the hospitality industry running some of Melbourne's best known cocktail bars, pubs and Nightclubs.  He is truly passionate about service and believes every interaction is a chance to make great friends.

    Favorite Gin - Animus Arboretum 

    “This is truly a gin of great balance, strong and delicate, with rich complex flavors that sing a beautiful song when mixed with the right tonic water or served in a martini.”

    Favourite cocktail - Tuxedo Number 2

    “This is my favourite martini variation, slightly lighter on the boozy elements and perfectly balanced. A great drink if you are looking for a martini style drink, but you'd still like to be able to feel your face after a few.”

  • Pov is our little Lithuanian legend and has been with bowerbird for nearly 5 years. He has become truly passionate about making all of his own inhouse syrups and concoctions and is the driving force behind the in-house cocktails list. In some ways Pov is the scientist of the bar, working with acids, and alcalines to deliver balanced and interesting cocktail bases. 

    Favourite Gin - Little Lon Ginger Mick

    “I love a big heavy gin with loads of spice and Flavour. Ginger mick give me everything I want in a versatile , old world gin with plenty of spice and body and enough balls to stand up to tonic water.” 

    Favourite Cocktail - Dry Martini

    “I'm a simple Lithuanian man, I like alcohol and water- my favourite drink is the humble dry martini. There's no room for error, if the bartender isn't good, the drink will be bad…simple.”

  • James is a country boy who's been with bowerbird for over a year. He's taken to bartending like a cricket team takes to a case of beer after a game. Loves a chat, loves a beer and makes some great drinks. 

    Favourite Gin - Imbue Journey

    “I was so surprised by how this gin changed its characteristics when it was mixed with tonic, it's so bloody good!”

    “I’m still learning all the gins on the bar, it's been a year and I feel like I'm only  the surface, but this gin is so easy drinking , I feel like I could drink them all night…and I probably will.”

    “I love how this is a drink for everyone. I can serve it to a seasoned drinker or a first timer and they will equally appreciate it. Super balanced , and enough kick to get you moving, it’s good shit!”
